Smokin’ Good Brisket Recipe

Ingredients:

  • 16-pound brisket
  • 1/2-3/4 cup Knotty Rub
  • 100% Pure Knotty Wood Plum Barbeque Pellets

Instructions:

  1. Remove brisket from packaging and trim the fat.
  2. Generously season the whole brisket with Knotty rub and place into the refrigerator. Make sure to do this step at least 1 hour before placing in the smoker.
  3. Remove brisket from refrigerator and fill up your smoker with Knotty Wood’s 100% Pure Plum Barbeque Pellets and preheat the temperature to 225˚F.
  4. Place the seasoned brisket on the grill, fat side down and smoke for 8 hours. After it has been cooking for 8 hours wrap the brisket in butcher paper and put back into the smoker.
  5. Increase the temperature to 250 ˚F and continue cooking the brisket until it reaches an internal temperature of 200-210 ˚F.
  6. After it has reached temperature, remove the brisket, and let it rest for 1-2 hours.

Slice and enjoy!

BELOW IS A RECIPE FOR CHICKEN DRUMSTICKS:

Knotty Wood Chicken Drumsticks

Ingredients:

  • 12 Chicken drumsticks
  • ¼ cup Cobram Olive oil
  • ½ cup Knotty Rub
  • Plum & Almond Knotty Wood BBQ Pellets

Instructions:

  1. Preheat smoker to 275 ˚ F. Add in a 50/50 blend of Almond and Plum Knotty Wood pellets into your hopper.
  2. Remove drumsticks from packaging and coat with olive oil. Place drumsticks in a resealable plastic bag with Knotty Rub and toss to coat evenly.
  3. After seasoning the drumsticks, place in the preheated smoker. Close the lid and smoke for 1–1 1/2 hours or until the internal temperature of the chicken legs is 165-175 ˚F.
  4. About halfway through cooking time flip the drumsticks so that they get evenly browned on both sides. The cook time will vary depending on how big your drumsticks are and how much meat is on it.
  5. Remove the drumsticks from the smoker, let rest 5-10 minute and then enjoy!

  • 5 1/4 Cups Chicken Stock

  • 3 Cups Fresh Pineapple, chopped

  • 1/2 Cup Fresh Cilantro, chopped

  • DIRECTIONS

    1. Place beans in large bowl, and cover with water. Soak overnight.
    2. Drain beans. Place beans in large pot and add fresh water to cover beans by two inches. Bring to a boil over high heat, then reduce heat to medium and simmer for 1 to 1-1/2 hours, or until tender. Remove pot from heat and let cool. Drain beans and set aside.
    3. Heat oil in large skillet over medium heat, and cook onions, celery, jalapeño, salt, garlic, red bell peppers, black pepper, cumin and bay leaves until fragrant. Add rice and stir to combine. Add chicken stock to skillet. Bring to a boil, cover and reduce heat to low. Simmer until rice is tender, about 20 minutes.
    4. Add beans and pineapple, stir well, and cook until heated through. Serve garnished with cilantro.
    5. Black beans are a small, dark variety of common beans, especially prominent in Latin American cuisine.

      There are several varieties of Black Beans (Phaseolus vulgaris), the most common of which is the small, rounded bean also known as “black turtle bean” because of its shiny, shell-like appearance.       Black beans are a diet staple in many cultures with a history that dates back 7,000 years in Central and South America, playing an important role in the cuisines of Mexico, Brazil, Cuba, Guatemala and the Dominican Republic. Brazil’s national dish, feijoada, is a rich, long-simmered stew made from black beans and a variety of fresh and smoked cuts of pork and beef. Frijoles negros (Spanish for “black beans”) is a simple stewed bean dish prepared widely throughout Cuba, Puerto Rico and Mexico and seasoned with onion, garlic, spices and sometimes leftover cuts of pork or bacon.

      Black beans boast a high nutrient density, containing protein, fiber, potassium, calcium, iron, magnesium and vitamin B6, while maintaining a low level of fats. In addition, black beans are a good source of three anthocyanin polyphenols – delphinidin, petunidin and malvidin – antioxidant-rich plant chemicals that reside in the deep black seed coat of the bean.

      Black beans are members of the larger family of legumes, plants used for their edible seeds and pods, which boast a high nutrient density with low-maintenance production and storage. They contain protein, essential minerals and fiber while maintaining a low level of fats.

      Believed to have originated in Peru, beans were spread through trade throughout South and Central America, later being introduced to Europe in the 15th century by Spanish explorers. Known as a high-quality, inexpensive source of protein and nutrition, they have become diet staples in many cultures.

Characteristics & Appearance

Horse mackerel has a long, narrow body with a larger head. However, there are a few defining characteristics that allow it to be easily identified, including its color, size, and shape.

Weight & Length

The horse mackerel is a fairly lightweight fish. You should expect it to weigh about 3.3 pounds or 1.5 kilograms on average.

This fish can vary a bit in length. You’ll usually find that the common scad is about 22-25 centimeters, or 8-9 inches, long. However, it can grow as long as 60-70 centimeters, or 23-27 inches.

Physical Characteristics & Color

There are a few specific physical characteristics that make the Atlantic horse mackerel easy to identify. It has unique coloring, markings, and fin shapes, as well as a lower jaw that nearly reaches its eyes.

The horse mackerel’s color is one of its most striking physical characteristics. It typically has a silver appearance.

However, you’ll see variations around its body. The top of its body is usually a darker gray that can appear bluish-green, while the rest is a bit paler.

This fish’s fins are also quite unique. Its first dorsal fin is tall, with seven spines. The second dorsal fin is longer than the first, and the two fins are separated by a narrow gap.

One of the Atlantic horse mackerel’s identifying characteristics is a sideline that runs the length of its body from head to tail.

This line appears silver or even white and has a high curve near the head that ends at the eye, which is quite large compared to the fish’s body.

Lifespan & Reproduction

Since the Atlantic horse mackerel has such a wide migratory range, the lifespan can vary from place to place.

For example, the oldest mackerel ever found in the southern regions was 24, while the oldest found in the north was 40, indicating the environment could affect how long a mackerel can live.

Reproduction varies for the horse mackerel based on where a school is located. You’ll find that there are stocks of Atlantic horse mackerel spawning throughout most of the year in different areas. The common trends are as follows:

  • Western northeast Atlantic stock spawns in early spring
  • North Sea stock spawns in the summer
  • Mauritania schools spawn in early to mid-winter
  • Ireland schools spawn in the summer
  • Females reach spawning age anywhere from 2-4 years old. They’ll spawn in 5-7 batches of about 140,000 eggs each in each season, and each larva will measure approximately 5 millimeters.The young will grow with other local schools of fish before moving on when they reach maturity.

    Habitat

    Although this fish gets its name from its significant presence in the Atlantic Ocean, don’t let the name mislead you. You can actually find the Atlantic horse mackerel in many of the world’s oceans and seas.

  • The Atlantic horse mackerel calls the Atlantic and Indian Oceans and the Mediterranean and Black Seas home.So don’t be surprised if you encounter this fish from the coast of Norway all the way down and around the coast of South Africa.

    Where Do Atlantic Horse Mackerel Live?

    The Atlantic horse mackerel appears all up and down the Atlantic coast. Still, despite the differing locales, the habitats are relatively similar.

  • In the winter, you’ll find schools of horse mackerel in shallow waters in the summer or at depths of up to 100-200 meters or 330-656 feet.The juvenile mackerel tend to frequent deeper waters, while the older fish swim in shallower depths.However, despite the fish’s wide distribution, most Atlantic horse mackerel catches happen in the North Sea and near Ireland.

    Food & Diet

    All species of mackerel swim in schools, which is also how they hunt their chosen meals. The Atlantic horse mackerel hunts a wide variety of creatures, including other fish, crustaceans, and small ocean creatures.

    What Do Atlantic Horse Mackerel Eat?

    Since the horse mackerel are carnivorous fish, they tend to go after shrimp, squid, smaller fish, and other crustaceans. However, small crustaceans and bony fish seem to be their most sought-after prey.

This post is all about how to cook White Rice in the Instant Pot (or any other electric pressure cooker). You can use this simple trick to decrease the time it takes to make dinner or meal prep for the future. You’re going to love it!

In case you’re new here, let me welcome you to The Foreign Fork. I’m cooking one meal from every country in the world, which means that I eat a LOT of rice. And by a lot, I mean like…. A ton.

Cooking rice on the stove is one of my least favorite things to do. It takes forever! You have to soak it and then boil it and leave it to fluff… It takes so long, and sometimes I want my meal to be ready now.

I recently acquired a pressure cooker, and it has been a lifesaver so far in terms of making dinnertime easier. We have loved making creamy macaroni and cheese, chicken marsala, and this awesome pasta with palomino sauce in the Instant Pot! So then I had an idea… Why not cook my rice in my Instant Pot?

Why You Should Cook Your White Rice in the Instant Pot

  1. Down to a Science: Like I mentioned above, cooking rice in the Instant Pot is a gamechanger. The ratios are right every time, and you never have to worry about leaving it too long and having it burn. It’s always on the right temperature/self regulating, etc. Plus, it’s so much faster than cooking your rice on the stove!

What Ingredients Do I Need?

  1. Long Grain White Rice: This recipe works specifically for Long Grain White Rice. If you want to make a different kind of rice, make sure to check the graph below. Or check out my recipe on how to make Brown Rice in the Instant Pot.
  2. Olive Oil: I use olive oil so that the rice does not stick on the bottom of the Instant Pot. You can use butter, a different kind of oil, or nothing if you so choose.
  3. Water: Any temperature of water will work. See below on tips for using broth.

Expert Tips

    • Please note, this recipe will work in any pressure cooker. I also have a Zavor LUX Pressure Cooker, and it works in that brand as well.
    • Try using broth to cook your rice as well. The rice comes out the same texture, but it has some extra depth of flavor! Use the same liquid amounts as in the instructions.

Common Mistakes when Cooking Long Grain White Rice

Below are the most common problems that people run into when cooking white rice and how to fix them:

  • Burnt rice or rice that is too hard: You didn’t add enough water. If you’re using a pressure cooker (and this method) it could also mean that you cooked your rice on HIGH instead of LOW
  • Watery rice: Your rice is undercooked. If you put the lid back on and cook for an additional minute or two, this could correct the problem.
  • Mushy rice: You added too much water to your pressure cooker! Try reducing it slightly next time.

Recipe FAQs

What Is the Ratio of Rice to Water?

When cooking long grain white rice in the Instant Pot, I use a ratio of 1:1.5. This means that for every 1 cup of rice, I add 1.5 cups of water. In fact, those are the exact measurements I normally use. If you want to double the recipe, it would be 2 cups of rice to 3 cups of water, etc.

Can I Double or Triple this Recipe?

Of course! The good thing is, doubling an Instant Pot recipe is easy. If you double the rice, make sure that you double the amount of water and vice versa.

If you increase the amount of rice/water in your Instant Pot, make sure not to cross the No-Fill line. This could create an overflow or a disaster!

However, if you increase the amount of rice in the Instant Pot, you shouldn’t need to increase your cooking time at all. No matter what, cook your rice for the same amount of time.

The pressure building function may take a little longer to process with more rice/water in the pressure cooker. However, the specific cook time will stay the same.

How Long Should I Cook my White Rice in the Instant Pot? 

There are a lot of different opinions on how long you should cook your rice. Some people say 5 minutes on high with a natural release…. I’ve found that my favorite way to cook White Rice in my Instant Pot is to cook the rice for 10 minutes on low with a quick release.

If you use the Zavor LUX pressure cooker, this is the automatic setting that your pressure cooker will default to for long grain white rice.

If you use the Instant Pot brand, you may have to manually set your pressure cooker to this.

How Long will Long Grain White Rice Last in the Fridge?

If you are storing your Long Grain White Rice in an airtight container, it should last for up to 7 days. If you put the container in the freezer, you can freeze your rice for months!

It’s easy to thaw the rice and have it for a dinner later on if you’d like. You can even prep your white rice in the Instant Pot in bulk, and then separate it into frozen meal preps for an easier time later on.

Can I Use the RICE Button on my Instant Pot?

Yes! In fact, I do that all the time. Using the RICE function on your Instant Pot or Pressure Cooker is a very easy way to cook rice, especially long grain white rice.

The problem is that if you use types of rice outside of white or brown, the RICE function can’t always handle it.

When you begin cooking more uncommon types of rice– like wild rice, arborio, or sushi rice, for example– the pressure cooker doesn’t have specific functions to handle each kind.

Instead, you can also use the normal pressure settings to cook any type of rice. This method is more comprehensive, and includes cooking methods for all types of rice!

The graph below details each type of rice and how to cook it using the manual functions instead of the pre-designated RICE function.
